quick, easy and healthy! "riced " oatmeal poke bowl
Healthier version of an already healthy poke bowl with oatmeal instead of rice!

I think oatmeal here in the states is usually a healthier substitute for cereal and is more common as a breakfast. But oatmeal has been very popular in Japan for quite a while as a rice substitution. Even though oatmeal is still a carb but compared to white/refined carbs like regular bread, pasta, and white rice, oatmeal has more fiber and is low on GI which means your blood sugar level doesn't spike up after you eat it which is very important for your health.
Anyways, so what's the "riced" oatmeal? It's just oatmeal cooked in a microwave with a little bit of water.
I use this riced oatmeal to make risotto, fried rice, just as a bowl of rice and for this recipe for a poke bowl. Unlike rice or noodles, oatmeal takes no time to cook and I think that's why it's been so popular in Japan. And the taste? It's not 100% like rice but it's pretty close and I actually enjoy eating it.
How to make "riced" oatmeal - one-person potion
Put 30g of rolled oats (I use bob's red mill extra thick rolled oats. NOTE: quick or instant oats won't turn out like rice, it will be mushy like baby food, please use rolled oats for this recipe) and 50g of water in a bowl (wide bottom bowl is better), mix, and microwave for one minute and 30 seconds (600w, 500w→ 1 min and 50 sec/1000w→ 55 sec). No need to cover it with plastic wrap. Yup, that's it. Make sure to lightly fluff the cooked oatmeal when you take it out from the microwave so the oatmeal won't be one big blob.

It's your choice what and how much you put in your poke bowl. Choose whatever you like.
My favorite toppings are:
boiled shrimp / canned tuna in water (drained) / your favorite fish like tuna & salmon
steamed broccoli
avocado
seaweed
sesame seeds
imitation crab
sliced cucumber
edamame
scallions
Put whatever you like on the riced oatmeal and enjoy!
For the sauce, I just mix some wasabi and soy sauce (sometimes a little bit of sesame oil as well) in a small bowl and pour it over on the bowl. Mayo or sriracha should work well too. My local poke place has a special house sauce which is soy sauce, mustard, and sesame oil mixture. You can try different sauces and find your fave!
